Diammonium phosphate (NH4)2HPO4, also known as DAP, is ammonium salt of phosphoric acid and is widely used as a buffering agent in baking and a yeast nutrient in winemaking. As well as being used in wine making, DAP is also a popular ingredient in mead brewing. Diammonium Phosphate is also used in purifying of sugar and away from the food and beverage industry is used as a nicotine enhancer and in the wool dyeing process.
